My go-to “looks fancy, but is simple” dessert recipe. You can have most ingredients in the pantry and it’s super easy to pull off. It’s great right out of the oven, but I also love it after chilling it in the fridge overnight as the chocolate hardens again and adds to the texture of the tarte.
Pear Chocolate Tarte

Ingredients
For the dough:
- 250 g flour
- 1 tsp salt
- 125 g butter (“a stick and a bit”)
- cold water
For the filling:
- 25 g butter (for the pan)
- 2 + 1 Tbsp sugar
- 100g (1 bar) dark chocolate
- 4 pears (or 2 cans)
- 1 egg
- 125 ml heavy whipping cream
Instructions
For the dough:
- Dice the butter (~1/2 inch.) Put flour, salt and the butter in a bowl.
- With the tips of your finger quickly rub the flour into the butter so that you get crumbles.
- Add 1/2 cup of (ice)cold water and use a (dining) knife to fold in the dough. It’ll start to bind.
- With your hands form it into a ball. But don’t knead it too much!
- Wrap it in cling foil or in a ziplock bag and put it int he frigde for an hour.
For the filling:
- Pre-heat oven to 190 C (375 F)
- Butter a pie pan (like the ones for pumpkin pies). Add 2 Tbsp sugar to cover the buttered pan.
- Stretch out the dough and roll it out in the pan to create the crust.
- Hack chocolate into smaller pieces (I always do it how I feel, sometimes I want a nice even chocolate layer below the pears, sometimes I crave some chunks in there.) Distribute the chocolate on the dough.
- Cut pears into fine slices and put them on top of the chocolate.
- Mix the egg with the cream and 1 Tbsp of the sugar. Pour the mix on top of the pears.
- Bake for 30-35 mins.
